The Best Clay Pot for Kho

Tested & ranked for caramel braising

A kho cooked in a clay pot tastes different — and better — than one cooked in metal. The clay holds a gentle, even heat that metal can't, so the braise reduces slowly and evenly without scorching, and the finished sauce clings the way it should. It's the one piece of equipment that genuinely changes the result.

I've cooked kho in a lot of pots over the years. These are the three worth your money, from a cheap traditional tộ to a do-everything modern option. You don't need all three — read the verdicts and pick the one that fits your stove.

OUR PICK
A traditional glazed Vietnamese clay pot

Best overall

Traditional Glazed Đất Nung Clay Pot

The authentic tộ, ~1.5L

$$

What we love

  • Gentle, even heat that's perfect for a slow kho
  • Inexpensive and genuinely traditional
  • The sauce reduces and clings beautifully

Watch for

  • Needs seasoning before first use
  • Can crack on direct high heat or thermal shock

Verdict. The real thing, and still the best. Season it, keep the heat gentle, and it will cook the best kho of your life for years. The pot I reach for first.

A modern glazed stoneware braiser pot

Best for induction & gas

Glazed Stoneware Braiser

Modern, flameproof, ~2L

$$$

What we love

  • Works on any hob, including induction
  • Far more forgiving of heat than raw clay
  • Doubles as an everyday braiser

Watch for

  • Heavier and pricier
  • Slightly less of that traditional clay character

Verdict. If you cook on induction or want one pot that does everything, this is the safe choice. Not quite a true tộ, but it makes an excellent kho with none of the cracking worry.

A small unglazed sand clay pot

Best budget

Unglazed Sand Clay Pot

The market classic, ~1L

$

What we love

  • The cheapest way into clay-pot cooking
  • Lovely porous heat once seasoned
  • Small size is perfect for a kho for two

Watch for

  • Porous, so it stains and needs careful seasoning
  • Most fragile of the three

Verdict. If you just want to try kho the right way without spending much, start here. Treat it gently, season it well, and it punches far above its price.
